  3. Rinse and drain the soaked brown rice and grind it to a fine paste with water. Mix it with the urad dal batter.
  4. Add the oats, grated cauliflower, grated carrots, chopped spinach, and salt to the batter. Mix well to combine all the ingredients.
  5. Cover the bowl with a lid or a cloth and let the batter ferment for 8-10 hours or overnight. The batter should rise and become light and fluffy.
  6. Once the batter is fermented, give it a good stir.
  7. Heat a non-stick or cast-iron skillet on medium heat. Pour a ladleful of the batter onto the skillet and spread it into a thin circle. Drizzle some oil around the edges of the dosa.
  8. Cook the dosa for a few minutes until the bottom is golden brown and crispy. Flip the dosa and cook the other side until it is golden brown.
  9. Serve the dosa hot with coconut chutney or any other diabetic-friendly chutney or dip of your choice.

This high-protein dosa recipe contains oats, vegetables, and brown rice, which are all low glycemic index foods. This means that they release glucose slowly into the bloodstream, which can help regulate blood sugar levels in diabetic patients.
